Malpuri

Malpuri or Malpua is a simple deep fried sweet prepared with maida & sugar as base ingredients. Kids love them usually for the flavour & fascinating texture & colour. Here is a simple & quick recipe which I obtained from a facebook group 'foodie' which I follow the most!

Preparation time: 15 minutes
Cooking time: 20 minutes
Serves – 12- 15 medium malpuris
Ingredients:
Maida – ¾ cup
Fine semolina – ¼ cup
Buttermilk – ¼ - ½ cup
Sugar – nearly ½ cup
Water – to dissolve sugar (about ¼ cup)
Lemon juice - 1 tsp (optional), buttermilk was not sour
Cardamom – 2
Salt – a pinch
Oil – for deep frying (used coconut oil)

Method:
  • Mix sugar and water in a vessel and bring to boil. Switch off and allow cooling to some extent.
  • Mix maida and fine semolina in a mixing bowl with ¼ cup of buttermilk. Add salt, lemon juice and sugar syrup prepared.
  • Bring this to the consistency of dosa batter by adding required buttermilk. Add flour if batter is too runny.
  • Take oil in a wok and heat it up. When ready, pour a ladle full of batter and fry flipping in intervals until it is cooked properly. Center of malpuri should turn yellow & sides will be brown. Take out from oil and remove excess oil. Serve warm.
